Taco Tuesday

I didn’t know Taco Tuesday was a thing until college, and now it’s one of the few things I look forward to on Tuesdays. I mean seriously, who doesn’t love a good taco? The only thing is, I’m not a big hamburger meat kind of girl, and trying to stay healthy while training for a half marathon doesn’t exactly call for greasy tacos once a week. So this week I took Taco Tuesday to a healthier level: Chicken Taco Zucchini Boats.

If you’ve never tried a zucchini boat I highly recommend it. They’re super simple, fun, and all around delicious. This chicken taco version was no exception! It was absolutely delicious. You begin by cutting your zucchini in half, length-wise, and hollowing out the center. You want to keep the insides because you’ll use some of it for the filling!

Next you have to brown your chicken and mix it with all of the spices, sauce, leftover zucchini parts and salsa! Then all you have to do is fill in your zucchini boats with the mixture, top with a bit of cheese, and back it in the oven for about 35 minutes. It doesn’t get much easier than that, and the result is a guilt-free and tasty taco Tuesday!

The full recipe can be found here! Note: I substituted ground chicken for ground turkey. Either would work perfectly fine. You could also use hamburger meat, but chicken or turkey would serve as a much leaner source of protein. Let me know if you try this out, because I would love to hear your feedback!
